super yummy treats

last night i made the most delicious vegan rice crispie treats ever. i've made many different variations of crispie treats in the past: with suzanne's ricemallow creme, with dandies vegan marshmallows, and an old recipe that i used to make when i was like 18 which required lots of corn syrup. but these i think are the tastiest ones yet, and i owe it all to trader joe's! the recipe is printed on the side of the box, and since some of you live where there is no such store (seriously so sad for you), i will share it with you here.

super yummy no-bake peanut butter crisp rice treats!

(that really is the name of these treats)

you will need:

1 cup brown sugar (i always use organic)

1 cup blue agave syrup (i used trader joe's organic, and i think i will only use 1/2 cup next time

1 cup creamy peanut butter (i love skippy natural)

7 cups crisp rice cereal (i used trader joe's brand)

chocolate chips -optional (i just sprinkled in about 1/2 cup of trader joe's semi-sweet)

1. combine brown sugar and blue agave syrup in a saucepan and bring to a near boil, stirring often. continue stirring until brown sugar dissolves. remove from heat.

2. add peanut butter to mixture. mix well. add crisp rice cereal and mix well. if desired, add chocolate chips, then mix well.

3. press the mixture into a 13 x 9 x 2-inch greased baking pan. refrigerate for several hours to cool and harden. to harden more quickly, place in freezer for about an hour.

makes about 16-2" squares

perfect with a warm cup of tea. that coconut chai is my favorite! it is wonderful :)
